Nicholas Evangelos Kolkos was born on May 28, 1946 in Athens, Greece, to Evangelos and Koula. He spent his early life in Greece, and at a young age joined the Greek Army, where he was a Master Sergeant and played for the Greek Army Soccer Team.
Nick moved to the United States and married his beloved wife Mary on November 15, 1970. Together they created a loving network of family and friends in the community of Merrick, NY. Nick's family meant the world to him, and his children Kristina and Evan, son-in-law Steve, and grandchildren Stephen and John were the center of his life. He was also a proud father and Pappou to Max, Markus, and MJ – three special dogs and best friends that meant the world to him.
Nick and Mary were the owners of the Marybill Diner, located near the train station in the heart of Merrick. It was a favorite for many and everyone was a "regular." Nick's generosity and passion for people was evident on every plate served and everyone he welcomed into the diner. Pancakes and omelets were overflowing on every table, and you could often find Nick in conversation with customers all day long. The diner walls were decorated with what was important to him, including NY Islanders Hockey memorabilia, grandchildren's pictures, and hole-in-one certificates. Nick welcomed everyone into his family. There was a deep connection to the community and Nick and Mary were honored as Merchants of the Year in 1982.
Nick was known for his outgoing personality wherever he went. From his friendships in Kiwanis to proudly cheering on the Calhoun High School football and lacrosse teams, you always knew when Nick was there. Nick was an avid and talented golfer, spending any free time he could get on the golf course. While he loved the playing game, he equally loved helping others improve their own games. Everyone Nick played with ended the day with a smile, whether from an afternoon of laughs or a few strokes off their game.
Nick touched the lives of countless people through his acts of kindness, friendship, laughter and love. The joy he brought to everything he did will forever remain in the hearts of those who knew him.
